Apple and Yogurt Cake

Ingredients:

1 pot of sugar-free yoghurt (about 125 mls) 2 pots of self-raising flour

1 pot of sugar (can reduce by half if the fruit is very sweet and ripe)

Half a pot of olive or coconut oil

3 large eggs

1/4 teaspoon of vanilla essence

very small pinch of salt (for children from 2 years old otherwise just leave it out)

1 large dessert apple, sliced (can be replaced by banana and berries)

Method:

Preheat your oven to 180°C.

Prepare a large loaf tin and line it or grease it well if it is not made of silicone.

Pour the yoghurt into the mixing bowl

Add 2 potfuls of flour and 1 potful of sugar (adjust to less if the fruit is very sweet)

Add a small pinch of salt, half a pot of oil, the vanilla essence and the eggs

Mix well together until the cake mixture is smooth and shiny then add the apple slices and pour into the cake tin

Bake for 45-60  minutes until it is firm and golden in colour.

If you like you can decorate it or put an icing sugar dusting over the top by using a sieve.

Instead of apples, you can also make this with mashed banana and berries

NB. This can be made as cupcakes too, just reduce the cooking time.
